Orientation course for Catering personnel
- The candidate should have passed the 10th or 12th Standard exam from a recognized board with a minimum of 40% marks in aggregate.
- The candidate should have secured a minimum of 40% marks in English subject in 10th or 12th standard examination from recognized board / university .
- A Degree or Diploma or Certificate in Hospitality or Hotel Administration, or Hotel Management & Catering Technology or Catering or culinary Arts, or hospitality and Tourism, of minimum six months duration from an Institution duly recognized by State Boards / UGC, approved University or approved by the National Council for Hotel Management and Catering Technology (NCGMC) of AICTE.
- STCW and Ship Security Course Certificates.
- Age limit 18 to 28 years (Age Proof to be submitted – Passport / Birth certificate).

Safe Food Handling Practices
- The course aims to improve the awareness on good hygiene practices and Food safety for the Saloon Crew working on a Merchant Ship. Course syllabus includes Personal Hygiene, Time and Temperature Control, Identifying spoilage in foods, Common micro organisms found in food , Bacterial growth , Good hygiene practices in a Ships Galley and Pest Control.

Refresher Course For Mess man
- This courses aims at enhancing the Food and Beverage Service and Housekeeping Skills of General Stewards/ Mess man on board. The Syllabus includes Personal Hygiene , Food Hygiene, Work attitudes, Food and Beverage Service , Housekeeping and Cleaning, , Catering Health and Safety, Material Safety Data Sheet, Waste management and Environmental Protection, Multi Cultural awareness , Basic Cooking and Baking.

Culinary Skill Enhancement Program
- This an eight weeks intensive training for cooks/ stewards. Four weeks of the training will be carried out in the Training Kitchens where the candidates will be preparing individual portions of food under supervision. 5th to 8th Week will be hands on training in the Galley where they improve their speed of work by quantity cooking.

Advance Course in Maritime Cookery
Applicants must be not less than 18 years of age and should have completed:
- Minimum of 6 months sea service in the saloon department.
- Pre sea training or from a DG Shipping approved Institution.
Three year Diploma or degree in Hotel Management from an Institution / university approved by AICTE or UGC.

Trade Test for Stewards
- Trade tests for stewards are conducted to assess the professional competence of a candidate in Food service and Housekeeping prior to joining a Ship. The candidate will be given various tasks to perform like Food and Beverage service, Cabin cleaning operations etc which will be evaluated and a report will be prepared based on his performance.

Trade Test for Cooks
- Trade tests for cooks are conducted to assess the professional competence of a candidate in cooking prior to joining a Ship. A menu comprising of Soup, two main courses , accompaniments and desserts will be given to the candidate. He will be asked to prepare the one portion of the menu which will be assessed by a team of two chefs. He will be assessed for hygiene standards as well.
